The production of our handcrafted vats is a three stage process:
1) A rigorous selection of only the finest quality oak.
2) The prolonged, natural drying phase, where the oak is aged in the open air in Rousseau's wood park.
3) The maintenance of strict hygiene standards, both before and during the manufacturing process.

Using only 100% french oak we work on three different levels :

Unic forest (natural seasoning 24 months) : • Tronçais T • Châtillon (Burgundy area) CH • Bertranges BR

Oak Blends (natural seasoning 24 months) : • Centre France HBC • Est France HBE • House Blend HB • House Blend MF36 (natural seasoning 36 months).
